Q&A: Jack Siew - Malaysian Gourmet Tour


Calling all Malaysian food fans! Get ready to loosen those belts as the Malaysian Kitchen Programme arrives at City of Dreams Macau on August 20. The programme features a Malaysian Gourmet Tour filled with decadent surprises throughout the hotel’s many restaurants. We chat with executive sous chef Jack Siew of City of Dreams to find out more… 

What do you think differentiates Malaysian, Macanese and other Asian cuisines?
As the hub of Asia, Malaysia is the best place to grasp the uniqueness of Asian cuisine. My tenure at Raffles Singapore and the Mandarin Oriental Kuala Lumpur furnished me with the basics in bringing the best possible dining experience to my guests. With a favourable supply of herbs and spices [to hand], I like to thrill my guests with mouth-washing dishes such as Malaysian style curry and other entrées.

With already so much amazing experience in the kitchens of Asia’s most prestigious restaurants, what keeps you inspired?
My aspirations stem from the passion and dedication obtained during my childhood. I was brought up in a traditional Malaysian Chinese family, and a deep connection with great dining experiences is the result of much family bonding during mealtime. 

How have you incorporated your years of experience into bringing top-notch cuisine to the City of Dreams in Macau? 
Malaysian cuisine incorporates authentic Asian cooking with a diversified range of spices and ingredients. My heartfelt feeling regarding spices motivates me to strive  to do the best I can and to cope with the challenging, yet rewarding, expectations of our guests at City of Dreams.

Personally, what are some of your favourite dishes to cook and eat? 
There’s no doubt my favourite dishes to cook and eat are chicken rice and rojak.

Can you share any tips for aspiring chefs who want to cook Malaysian cuisine?
All in all, it’s about passion. But the culinary world is also all about teamwork and innovation. In order to excel, I always encourage my team to think outside of the box and to take the initiative and learn from whatever they experience. I rely on my team during each cooking and dining experience and they’re a crucial part of our success here.
